It is harvested in the early spring and thus has high levels of umami, though not as high as Jobetsugi and other ceremonial grades. This certified organic blend can be consumed by itself or as a latte. Iced or hot—your call!

Being organic, the amino acid levels are lower than conventional matchas (Jobetsugi), but there are still nice levels of mouth-filling umami. That comes from it being harvested during the peak season.
